Here’s my second cooking episode for BariatricTV, I think the Protein Cooking thing is gonna stick…
This is a recipe I found even before my surgery and tweeked (mostly by adding the protein powder) a bit to up the protein. For some reason, I just never really got around to sharing it here… until now.
Here’s the full recipe…
1/3 cup rolled oats
1/4 cup cottage cheese
1 egg
2 Tablespoons protein powder
Combine all the ingredients in a blender or food processor, the Magic Bullet works good for this. Add water a tablespoon at a time until you get that familiar “pancake batter” consistency.
Cook on a hot griddle or skillet, this will make about four, 5-6 inch pancakes. Cook on the first side until the bubble form and start to pop, flip and cook about 3 minutes more.
Top with your favorite pancake topping.
I’ve made many variations of this over the months, but one of my favorites is still adding about a tablespoon of pumpkin puree, some cinnamon and nutmeg along with a few raisins.
Use whatever flavor protein powder you like, but for a basic pancake start with unflavored or vanillia. Mikey from BTV was talking about banana protein shakes, I bet his would make for a great pancake with some walnut chunks tossed in there.

I love this. I vary the flavor. I some times make it a tropical flavor by using the pinapple cottage cheese. Or I saute onions and add them. Top it with some salsa and sour cream. It’s a regular staple at my house.
