Spending the day with Joe (4/1/2010)

I’ve been having a bout of ‘bottomless pouch’ days lately. My weight’s been bouncing up and down a few pounds every couple days cause of it. So I figured I would document my food today in an attempt to keep Joe happy and myself in line.

Breakfast was oatmeal. Big surprise. I know a lot of people would balk at the carbs, but it really does keep me going through the morning. My snacking issues happen later in the day. This morning was PB&J oatmeal. I recently got some peanutbutter powder (I’ll be doing a writeup on it soon, promise), mixed a serving (equal to 2T actual peanutbutter) and my usual 1T ground flax seed and 1T protein powder. Then after cooking topped it with a dollop of SF blackberry jelly.

I ate “out” for lunch. Weather has been great this week, lil breezy, but was bout 70 when I went down the road to a local park. Tuna salad with spinach leaves that I made sort of mini-wraps with, some fresh strawberries and spicy, baby dills. The tuna had radish and celery with a dressing made of yogurt, mayo and ranch dressing mix.

Had a piece of string cheese for an afternoon snack at work. Sorry, no pic. I figure you know what string cheese looks like. If not, Google it. Later, before going for my bike ride I had a handful of cashews and a few pecans to tide me over.

After the bike ride, I used some left over taco meat, some soy/flax chips from Trader Joe’s , cheese and some pico de gallo I made to cook up some nachos for dinner.

I had a lil bit more than what’s shown here, using up the last of the meat I had and I think I’m actually nice full.  If I end up hungry enough for a snack later (and I’m really hoping to avoid doing so), I may just make a protein shake with some of the fresh strawberries I have on hand.

WLS has changed my life in so many ways, including my career as I now tackle nutritional coaching and other obesity education issues.
